In-8, dark green half-maroquin with corners, smooth spine decorated with large rocaille fleurons, cold roulette on the boards, trimmed, gilt head, covers preserved (pastiche binding). Unique and rare edition of this manual, one of the best devoted to the dissection of meats, table service and the choice of the best cuts; remarks on the pot-au-feu, very large choice of menus according to the months of the year, ways of serving. 24 steel-engraved plates, 15 of which include 56 figures on how to carve, and 9 offer table arrangements. A very fine copy, washed and carefully pasted, all copies being spotted with freckles and paper defects. The thin vellum thus treated has become superb. The covers are very rare (2 small repairs to them). Attached is the (detailed) note to the bookbinder-restorer.
