Unique and rare edition of this manual, one of the best devoted to the dissection of meats, table service and the choice of the best cuts; remarks on the pot-au-feu, very large choice of menus according to the months of the year, ways of serving. 24 steel-engraved plates, 15 of which include 56 figures on how to carve, and 9 offer table arrangements. A very fine copy, washed and carefully pasted, all copies being spotted with freckles and paper defects. The thin vellum thus treated has become superb.
