BOULLAY (Jacques). Manière de bien cultiver la vigne, de faire la vendange et le vin dans le vignoble d'Orléans. Orléans, J. Rouzeau, 1723; in-8 (175 x 109 mm), spotted calf, ribbed spine (period binding). Third edition, "larger and more accurate than the previous ones". This is the one described by Vicaire, 109. The first edition dates from 1712.
The rules laid down by Boullay are not specific to the Orléans region but apply to all vineyards, from the choice of land according to the grape variety, planting, the first ploughing and re-binage... through to vinification. The book also provides vineyard owners with all the means they need to foil the mischief of a bad winemaker.
