[MAP]. [VEFOUR]. HAMEL Frères, Restaurateurs, Successors of Boissier and VEFOUR. Café de Chartres, Palais Royal, Galerie du Perron, n°82. Lunch, dinner and supper menu. Lounges and offices for companies. Card/poster for the famous restaurant circa 1830, 60 x 44.3 cm on laid paper (grape watermark). In 1820, Jean Véfour took over the Café de Chartres and transformed it into a sumptuous restaurant. After making a fortune, he sold it to his friend Louis Boissier in 1823. A worthy successor to Véfour le Grand, Boissier kept the establishment at the top of its class and even managed to inherit all the lunches in the wooden and glassed-in gallery. Business was so good that in 1827, he in turn sold the restaurant to the Hamel brothers. The fire in the Galerie des Bois in 1828 and the closure of the gaming houses in 1836 dealt a fatal blow to the Palais-Royal. The Boulevards took over, attracting lovers of pleasure and gastronomy. Le Grand Véfour, dignified and unflappable, withstood the fierce competition and calmly watched the wreckage of the Palais-Royal. In 1840, it was even in top form, definitively triumphing over its only real rivals, the Frères Provençaux and Véry. The wide range of dishes on the menu is impressive. There are 35 types of soup and 23 hors d'oeuvres, 22 beef starters, 26 mutton starters, 41 poultry starters, 36 veal starters, 30 types of fish, 20 roast dishes, 53 vegetable entremets, 56 dessert dishes and 7 cheese dishes. There are 23 red wines on offer, 16 white wines and champagnes, and numerous liqueur wines and fine liqueurs.
