This charming work is divided into three parts: Théorie, Pratique and Mélanges et fantaisies, with chapters on sovereigns at the table, meals, modern table decoration, drinking, cooking and cooks, pastry-making, restaurants, new table classics, etc. The volume is illustrated with 170 figures in and out of text, including 2 fold-out plates: the first shows a gallery of French gastronomes and practitioners, from Brillat-Savarin to the 1890s, the second reproduces a double-page spread from Le Figaro-Gourmand.
