DUFOUR (Ph.-Sylvestre). New and curious treatise on coffee, tea and chocolate. Seconde édition. Lyon, Deville, 1688; in-12 (160 x 91 mm), spotted calf, ribbed spine decorated with gilt fleurons and dotted lines (period binding). Beautiful frontispiece depicting a Turk, a Chinese and an American Indian enjoying coffee, tea and chocolate together, 3 hors-texte plates showing the plant, the instruments used to make the beverage and the natural ingredients, 3 vignettes (repeated) showing the three characters. Each part deals with the benefits of the beverage and the recipes for making it. The treatise on chocolate, the most extensive (140 pp.), analyses all the ingredients that can be used to make it: cocoa, sugar, vanilla, hazelnuts, etc., before detailing the various recipes. A leading Lyon apothecary, Dufour was an international trader, buying and selling plants, spices and "drugs" from the Orient. He was also a lover of curiosities and built up an important cabinet that included rareties from the Levant and curiosities from India. Vicaire 293. A fine copy in an attractive contemporary binding.
