HAEFFELÉ (Ernest). Normal nutrition and cooking based on the rational use of vitamins. Spontaneously eliminating tuberculosis, cancers resulting from abnormal nutrition, and nutritional diseases. S.l., circa 1920-1930. In-4, 772 pages, green half-chagrin, smooth spine decorated. Despite its title, this manuscript is a veritable treatise on cooking and gastronomy. The "dietetic" objectives announced in the title and developed in the first pages do not prevent the author from giving us countless recipes and advice on all foods, from hors d'oeuvres to desserts, including creams, meats, game, vegetables, etc. His precepts are based on the principles of good nutrition.
His precepts are based on the fairly recent discovery (1912) of vitamins. A table of chapters and a table of contents complete this volume.
Ernest Haeffelé, born in Colmar in 1859, gave this manuscript as a gift to his "granddaughter, goddaughter and pupil Marie Louisev Gaudin, the judicious implementer of the precepts formulated in this work". This letter, on a flyleaf, is signed and dated 1932; it is accompanied by a photograph of the author.
The handwriting is very legible; this manuscript seems to have been intended for publication, but remained unpublished.
