With the exception of a few decorative elements (typographical mark, entablature, lettering, and cul-de-lampe), the Lyon edition is an identical reproduction of the original. Only six or seven copies are known to exist, in public or private collections: BnF, BM d'Angers, Lilly Library in Bloomington, Harry Schraemli in Lucerne (cat. 1971, no. 420), Theodore Drexel (cat. 1891, no. 1115), Huchet (cat. 23, no. 44bis). L'Art de bien traiter embodies the transformation of culinary culture that took place in France in the 17th century. 250 recipes express a respect for the true taste of things, albeit not without controversy.
