Lot no. 92
MAISTRE D'HOSTEL (Le): The Maistre d'hostel who teaches the correct way to serve on the table and how to arrange the services. Together the wine waiter who teaches the way to fold the line in several figures. Et à faire toutes sortes de confitures tant seiches que liquides. Paris, Pierre David, 1659. Small in-8, ivory vellum (contemporary binding). Extremely rare first edition, and the only one, of this treatise published by Pierre David, who himself signed the epistle to Pierre de Lune, cook to the Duke of Rohan. The third part is the most important: "it is none other than the treatise on jam known as Confiturier françois, traditionally and imprudently attributed to La Varenne, and of which this is the first printed edition. (...) It nevertheless offers a much larger number of preparations and is therefore a new work. A fine copy. Armorial stamp on verso of title. Livres en bouche, 121 - Vicaire 553. Missing from Oberlé, Bitting.
