It follows on from the famous Parfait boulanger published in 1778, and forms part of the series of treatises or memoirs that Parmentier published on economical, cheap and above all nutritious foods for the people, such as potatoes, maize, milk, grains, etc. In this study, he is the first to publish a treatise on the subject.
