SAUTERNES - Château d'Yquem 1er Cru Classé Supérieur 1987 (sweet white). 1 bottle of 37.5 cl Note: Considered to be the greatest white wine in the world, Château d'Yquem comes from a small hill that benefits from an exceptional microclimate and terroir. The vineyard, which comprises no fewer than 150 plots with different soils, is pampered throughout the year: each vine receives an average of 50 treatments a year. Selection is particularly rigorous at Yquem: it is often said that one vine only produces one glass of wine. The grapes are harvested in a minimum of four passes (seven in 1997!) to ensure that they are perfectly ripe and free from noble rot. In the cellar, time is taken for vinification and ageing. The wine is matured for up to 20 months in new barrels. The estate also produces a dry white wine, Y d'Yquem, from grapes not affected by botrytis cinerea. In some years, the entire harvest is downgraded (no production of Yquem in 1910, 1915, 1930, 1951, 1952, 1964, 1972, 1974, 1992 and 2012). Since 2022, the estate has been certified organic (AB/ Eurofeuille). Could there be a better-known name in the wine world and in the world of meditation grands crus? After all, the estate's history dates back almost 400 years. The wine is produced on around a hundred hectares of the 113 available to the estate. The majority of these are planted with Semillon (75%), supplemented by Sauvignon Blanc. The proximity of the vines to the Ciron, a tributary of the Garonne, provides favourable conditions for noble rot to develop. Once the grapes are ripe, they are meticulously picked by hand in successive batches before being skilfully vinified, thanks in particular to almost two years' maturing in barrels. Tasting notes Cuvée 2004: This marvellous wine has aromas of peach, pineapple, coconut, nutmeg and cinnamon, with hints of toast, caramel and vanilla from the new oak. With their extraordinary richness and concentration, Yquem wines have extraordinary ageing potential. Guitry once said that "after Mozart, the silence that followed was still Mozart".
