After being recruited by Alain Ducasse, he became head chef at La Vague d'Or in Saint-Tropez at the age of 27, quickly earning a second Michelin star in 2010 and then three stars in 2013. In 2019, he was voted "the world's greatest starred chef" and in 2021, he opened the gourmet restaurant at the Cheval Blanc hotel in Paris, where he won three Michelin stars for Plénitude in 2022. Donckele is renowned for his cuisine, which makes the most of local produce.
