ESCOFFIER (Auguste). The Culinary Guide. Aide-mémoire de cuisine pratique. Paris, 1903. In-8, brown half-maroquin with corners, smooth spine decorated with gilt fillets, gilt edges (Modern binding). A great cooking classic. Auguste Escoffier (1846-1935) was called "the king of cooks and cook to kings". The Culinary Guide was written in collaboration with other great chefs of the time, including Philéas Gilbert, E. Fétu, A. Suzanne, B. Reboul, Ch. Dietrich and A. Caillat, and illustrated by Victor Morin. Numerous black drawings in the text and a fold-out plate captioned Garde-manger.
