Gilles Goujon, renowned Michelin-starred chef, began his career as an apprentice at La Compagnie du Midi in Béziers in 1977, before perfecting his skills at the Moulin de Mougins with Roger Vergé. In 1992, he moved to Fontjoncouse and opened the Auberge du Vieux Puits, where he enjoyed growing success, winning his first Michelin star in 1997, followed by his second in 2001. In 1996, he was crowned Meilleur Ouvrier de France. In 2010, he became the only new chef to win three Michelin stars. His cuisine, based on local produce and simple seasonal products, is both creative and refined. It has earned him numerous accolades, including a 19.5/20 rating from Gault & Millau in 2017. In 2016, he was made a Knight of the Legion of Honour.
