One of the most beautiful works illustrated by André JACQUEMIN (1904-1992), printed in an edition of 245 copies on vélin pur fil du Marais, decorated with 168 original drypoints by the artist, including one on each of the covers, 2 full-page and the others in the text. Jacquemin had this to say about the book: "Henri Flammarion, who ten years earlier had commissioned me to illustrate 'La Naissance du jour', came back to me with a major project: to illustrate Brillat-Savarin's 'Physiologie du goût'. It was a work of magnificent style, a manifesto of the culinary arts and the pleasures of the table, and a delicious collection of the memoirs of an illustrious 19th-century chef. It was my longest battle: five years of work, one hundred and sixty-eight drypoints. As well as evoking the products, dishes and regions, I decided to engrave the great figures of the gastronomy of my time: Curnonsky, Edmond Chaix, Doctor de Pomiane, Fernand Point". A portrait of Colette can be added to the list of people represented by Jacquemin. One of 200 copies numbered 21 to 220 (no. 100), from the collection of Pierre Bouchet. It has been enriched with the following items: - 4 L.A.S. from Jacquemin to Pierre Bouchet, 16 pages in different formats, about the publication. - Jacquemin's autograph manuscript, 4 pages in-4, giving the dimensions of all the illustrations in the book. - 3 handwritten mock-ups of the title. - 3 original pencil drawings, signed by Jacquemin, two of which are dedicated, one to Madame Bouchet (Cerisier), the other to Pierre Bouchet (a Saint-Pierre). The third drawing depicts a woman's face in profile. - Bon à tirer for the full-page engraving in the second volume, justified and signed by the artist, and countersigned by Flammarion. - Greeting cards from Papeterie Arches for 1951, illustrated with an etching by Jacquemin.
