Founded by Louis Bailleux around 1856 in Maison du Val. After his marriage, Louis moved to Maison du Val and continued to sell his bric-a-brac on the road, but added the good Brie-style cheeses, butter and fresh cream made by his mother-in-law. Little by little, the travelling salesman became an industrial dairyman. Louis Bailleux contacted the Trappist monks of the Port-du-Salut abbey. In 1878, the brand was registered with the clerk of the Laval Commercial Court. Louis Bailleux entrusted one of his nephews, Cyrille Desoutter, with a position of responsibility.
