In-8, marbled calf, ornate spine, red title page, red edges (period binding). First edition of this history of baking and treatise on wheat, flour, leaven, dough, baking and trade. All the principles that Parmentier developed in his treatise were applied at the École Pratique de Boulangerie that he opened in Paris and directed (Oberlé).
