PORTUGAL - Pêra-Manca Vinho Tinto 2013 Évora Doc Alentejo. 1 bottle of 75 cl Note: The mythical Pêra-Manca from the Cartuxa brand is one of the main assets of the Eugénio de Almeida Foundation. It is very well structured and elegant on the palate. Produced from carefully harvested and selected Trincadeira and Aragonez grapes. The grapes come from selected plots in vineyards over 30 years old, where ripening takes place gently, without excessive water stress, preserving the aromatic and extractive potential of the varieties. Once the ideal state of ripeness has been reached, the grapes are harvested and transported to the cellar, where the technological process begins, with total de-stemming, careful optical selection and light crushing. Fermentation takes place in temperature-controlled French oak vats, followed by prolonged post-fermentation maceration. Aged for 18 months in French oak barrels, followed by bottle ageing in the cellars of the Cartuxa monastery. This wine has not undergone tartaric stabilisation.
